Experience New York without leaving Adelaide's SKYCITY Casino

Sean's Kitchen provides a layered journey of discovery to New York's bygone era of lavish surrounds, finest produce, and artisan beverages.

Part of Adelaide's SKYCITY Casino Stage Two redevelopment, celebrity chef Sean Connolly was appointed the executive chef to help create and run a high-end restaurant experience.

Schiavello Construction SA was assigned to manage the design and construction of a fitout that oozes style through a modern take on a 1920's New York Brassiere.

Built to transport patrons across the world

With designer Alexander and Co. behind the concept, patrons are treated to a richly inviting culinary tour of New York - Great Gatsby style.

The dining galleria is characterised by cured timber park benches, green shrubbery, custom wooden tables, and brass street lighting. The galleria, also known as 'The Marketplace', is like dining alfresco in Central Park.

There is a museum of ham on the landing that nods to Manhattan's Meat Packing District. Marble-topped bar areas, with bespoke oxidised metal cladding and leadlight balustrades, are reminiscent of old world Wall Street glamour.

Working within a heritage space

Accompanied by a distillery and private dining room on the mezzanine level, the Sean's Kitchen experience is seamlessly intimate yet grand.

Delivering a quality project from concept drawings, with highly stylised fittings and working within a heritage space was both exciting and challenging. As the team was unable to touch existing elements, such as the vaulted ceiling, they were required to find innovative solutions for mounting lighting, speakers, and fire equipment. Prototypes were also created to ensure design met both functionality and cost.

Design changes made during construction

The most significant challenge came halfway through the 16-week programme when major design changes were made to the bar, open kitchen, fridge museum, and distillery.

An alfresco dining area was also added to the scope that included custom street lamps and integrated heating.

The dedicated project team was able to deliver a world-class restaurant high on custom features and long lead-time items - everything was done on time. They completed every element to the highest quality while dealing with a design that was still evolving throughout the construction period," says Richard Collins, Project Director - Jinton Project Managers.

Sean's Kitchen returns to an era where meticulous attention to detail was the cornerstone of quality, and the pursuit of grandeur was at the heart of its creators. A master stroke by Sean Connolly that feels right at home for Adelaide's discerning diners.
